Surimi adalah produk olahan ikan yang dibuat dari daging lumat ikan yang sudah dipisahkan dari Kulit, sisik, jeroan dan kepala ikan, yang dicuci menggunakan air dingin (5⁰C) sehingga membentuk pasta ikan yang berwarna cerah/terang, dibumbui dengan bahan kryoprotectant (gula), STPP (Sodium tripolyphosphate), Egg White powder (albumin/putih telur).
